Good lord! Swapping new technology into something that is so simple that you could fix it with hand tools. This is ridiculous. If I were you, find a GT that has a blown engine (there are many- since all it is good for is maybe a decent 0-60 and 1/4 mile time, but not continuous triple digit speed), and drop the engine and computer into that.
fix the 08 mutstang, it will come out cheaper.
You can not do it unless you want to change the entire wiring harness
and it will be a headache and a half. So Good Luck

This is called a Resto Mod.
Taking todays drivetrain and installing it in an Older car.
They sell well at Barrett Jackson, if done right.
Now the Year model is what you need to study.

I’ve seen the 69 Sportsroof (fastback) done with 06 GT500
Also a 07 California GT stuffed into a 68 Coupe.
No 64 1/2, 65, 66, just not recommended for this
You can upgrade brakes to aftermarket or use your donor car
And yes you need to gut your Older car and this will be a ground up, Better than restoring, also most new car when done.

Cuda’s with the Newer Hemi are the most done cars.
This can be done if you are very thorough. Not only the computer but every single computer, there are several. Also, all relays and modules, and as another poster stated the entire wiring harness would be very beneficial. Don’t forget the fuel pump, and entire air intake system as this can also affect computers and performance.
